A special appetizer for dinner tonight. Simple, tasty bruschetta. Toast the bread under the broiler, a few minutes on each side. Cut a clove of garlic in half and rub that over the toasted bread. It’s surprising how much flavor you get with simply rubbing the clove on the bread! Spread the toast with goat cheese. Dice tomatoes and mix with salt and pepper. Add this to the toast, then add sliced fresh basil. You’ll love it!
We tried salmon on a cedar plank today. It was a fun dinner and easy to make. Soak the planks, at least 2 hours. (We soaked for 24!) Salt the plank. I created a honey mustard wet rub for the salmon. Heat the grill and place the planks on the grill. Place the salmon on top and cook for around 20-25 minutes.
After watching the Brewers last night, John and I drove to Minneapolis to catch a Twins Game.
John got us great seats off StubHub that were tied to the Delta Legacy Club. So we had air conditioned food options, and great seats behind home plate. The air conditioning made for a great break from the extreme heat we’ve been having all week.
